In general, I can recommend looking at the NESTML model files, which you can find at:

https://github.com/nest/nestml/tree/master/models

These are not guaranteed to correspond exactly to the NEST models, but should be very close and can potentially help a lot in developing an understanding of the much more intricate C++ code.
